Abstract
This study aims to determine the effect of the dose of sugar and citric acid on the quality of red dragon fruit peel jam. The study was carried out at the Post-Harvest Technology Laboratory, Faculty of Agriculture, Indonesian Muslim University from July to August 2021. The study used a completely randomized design (CRD) with a dose of sugar and citric acid, the treatment was repeated 3 times. The research formulation consisted of 6 levels, namely: dragon fruit peel 1kg + sugar 500g + citric acid 5g, dragon fruit peel 1kg + granulated sugar 550g + citric acid 5g, dragon fruit peel 1kg + sugar 600g + citric acid 5g, dragon fruit peel 1kg + 500g sugar + 10g citric acid, 1kg dragon fruit peel + 550g granulated sugar + 10g citric acid, 1kg dragon fruit peel + 600g sugar + 10g citric acid. Parameters observed were total dissolved solids (TPT), ash content, pH, color, taste, and aroma. The results showed that jam from red dragon fruit peel with the addition of 600g sugar + citric acid 10g/kg dragon fruit peel gave better results at 16.50% ash content, pH 4.07, color 5.07 (somewhat like), taste 4.33 (neutral), and aroma 4.80 (slightly like).
