Abstract

This study aimed to determine the effect of carbide dose (CaC2) on ripening time and quality of plantain fruit, determine the effect of packaging type on ripening time and quality of plantain fruit, determine the effect of interaction between carbide dose (CaC2) and type of packaging on ripening time and quality. plantain fruit. The research was carried out from September to October 2021 at the Post-Harvest Laboratory of the Faculty of Agriculture, Indonesia Moesliem University. The study was arranged using a two-factor randomized block design (RAK) method and repeated 3 times. The first factor was carbide consisting of 4 doses: No carbide, with carbide 2 g, 4 g, and 6 g / kg of banana. The second factor was packaging/container consisting of 4 types: Polypropylene Plastic, Burlap Sack, Plastic Sack, Cardboard. Parameters observed were ripening time, weight loss, Total Dissolved Solids, vitamin C content, color and texture organoleptic tests. The results showed that carbide and packaging had no significant effect on ripening time and quality of plantain fruit. Giving carbide 6 g/kg bananas was able to speed up the ripening time to 2 days of storage both in burlap sacks, plastic sacks and cardboard.
